Griddling around...

I try to cook pancakes for the kids once a week. They go nuts for them so I make plenty to freeze as well. The frozen ones make a quick and easy breakfast option during the week. It is something that I really have to push myself to make though. I am NOT a morning person. It seems that no matter how early I go to bed, I still need to be DRAGGED out of bed by my baby girl.

My favorite traditional pancake recipe is from The New Best Recipe cookbook. It isn't as easy as adding water to a boxed pancake mix but I like to go with quality over ease. If I could find a ready-made mix that tasted phenomenal, trust me, I'd go with that in a heartbeat!

Light and Fluffy Pancakes

1 tbsp juice from lemon
2 cups of milk
2 cups flour
2 tbsp sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 large egg
3 tbsp unsalted butter, melted and slightly cooled
1-2 tbsp vegetable oil

1. Whisk the lemon juice and milk together in a medium bowl or large measuring cup; set aside to thicken while preparing the other ingredients. Whisk the flour, sugar, baking powder, baking soda, and salt in a medium bowl to combine.

2. Whisk the egg and melted butter into the milk until combined.
Make a well in the center of the dry ingredients in the bowl; pour in the milk mixture and whisk very gently until just combined (a few lumps should remain). Do not overmix.

3. Heat a 12-inch nonstick skillet over medium heat for 3 to 5 minutes; add 1 teaspoon of oil and brush to coat the skillet bottom evenly.
Pour 1/4 cup batter onto 3 spots on the skillet. Cook the pancakes until large bubbles begin to appear, 1 1/2 to 2 minutes. Using a thin, wide spatula, flip the pancakes and cook until golden brown on the second side, 1 to 1/2 minute longer. Serve immediately. Repeat with the remaining batter, using the remaining vegetable oil only if necessary.

Cool Tools:
A white, ceramic pancake/tortilla warmer from Crate and Barrel. Cute enough to put right onto the table. Unfortunately, it looks like it is no longer available. :(
