What on earth to whip up last minute for my house guest who is not eating carbs?
I found a talapia fillet in the freezer and some fresh thyme and cilantro in the fridge (you could use almost any fresh herbs you have on hand really). After letting it defrost completely, I rinsed the fillet in cold water and dried it well with paper towels.
Then I gave it a light sprinkle of sea salt, fresh ground pepper and the thyme leaves. I heated up a frying pan and when it was really hot I added a small pat of butter and a drizzle of olive oil (the butter should sizzle). In went the fish, pretty side down first.
After 2 1/2 minutes, I flipped it over. I cooked the other side for two more minutes,
turned off the heat and added chopped cilantro directly into the pan.
I plated it with a side of sugar snap peas. My guest couldn't believe how quick and easy it was.
Okay, now back to entertaining him!
