Pest-o, change-o!

I love Caprese salad (Insalata Caprese (salad in the style of Capri) is a simple salad from the Italian region of Campania, made of sliced fresh buffalo mozzarella, tomatoes and basil; seasoned with salt, pepper and olive oil).

It's a great meal on those hot summer days when you don't feel like eating anything too heavy.
My plan tonight was to make hamburgers but I wanted to do something different with them. I decided to head in an Italian direction and incorporate the Caprese salad into it.

To make these Caprese Burgers, first grill up some Niman Ranch Burger patties (turkey or veggie burger patties would be great too!).
Put a couple pieces of fresh mozzarella (buffalo mozzarella is best) onto your patty during the last minute or two of cooking to melt it a bit. Then spread some store-bought or homemade pesto sauce onto the buns and add a slice or two of tomato. You can lightly salt and pepper your tomatoes if your pesto sauce isn't too salty already.
You can't go wrong if you use high-quality, fresh ingredients!
