Broccolini...

My kids are pretty good about eating their veggies. There are only a handful they really like though. Broccoli is probably number one on that list. With that being said, we have broccoli about three times a week. None of us are sick of it yet but I thought I'd change it up and do broccolini tonight instead.

This is an easy method and it's a side dish that goes with just about anything.

Well, the kids gobbled it up, no problem. I told them it was broccoli and they didn't even question it. So I just smiled and ate my dinner.
Garlicky Broccolini
  • 8 oz of broccolini, rinsed clean and trimmed
  • 1 tbsp butter
  • 2 tsp chopped garlic 
  • kosher or sea salt and fresh ground pepper
Put the broccolini in a pan. Fill up enough water to just cover all of the stalks.
Put on the stove over high heat. When the water starts to boil, turn down the heat to a simmer and cook for about 2 minutes.
Remove the broccolini from the pan and immediately submerge in an ice bath to stop the cooking process. Drain and dry your pan. Put it back on the stove over medium-high heat. When the pan is hot, add the butter and garlic. Saute for about 15 seconds.
Add the broccolini and cook for 3-4 minutes, stirring occasionally. Season to taste with salt and pepper. Serve hot or warm.
