Tea time...

One of my favorite things to do is go for traditional English afternoon tea. I love the hot tea, I take mine with tons of cream and sugar. But it's the pastries and those adorable finger sandwiches that really make me weak.

Now that I'm a mom, I don't get out much without the kids. I couldn't imagine afternoon tea going over too well with a two and four-year-old in tow. So for lunch I made some smoked salmon sandwiches with those little English ones in mind. A nice cup of hot tea made it perfect.

Smoked Salmon Tea Sandwiches
  • thinly sliced European-style whole grain bread (crusts removed if you prefer)
  • herbed cream cheese
  • smoked salmon
  • capers, drained
  • lemon juice
Spread a thin layer of the cream cheese on two slices of the bread. With the cream cheese side facing up, add a couple layers of salmon. Sprinkle as little or many capers as you like on top of the salmon. Then a light spritz of lemon juice.
Top it all off with the second slice of bread, cream cheese side down. Cut into four.
Serve immediately.
